Estates where the finish is the value

And plaster fails by losing its keys, which means a wall can be structurally detached while looking fine, so we tap the field before calling anything salvageable.

Where plaster does have to come out we replace it in kind with a three-coat system rather than substituting drywall, because the wall thickness and the way it meets original casing will show otherwise. Original oak and fir flooring gets mat drying systems that pull moisture up through the boards rather than blowing air across the top.
